Mesmerizing Rava Laddu

This post has been lying in my drafts since Krishna Janamashtami – 2012. The reason behind holding this recipe is not my laziness, its inspiration to take amazing pictures to give equal justice to this recipe.
Finally with the help of ‘R’ I was able to capture few shots and was happy with the result. So here I’m posting this recipe with a beautiful pictures, hope you love them :)

Laddu

Laddu is an Indian sweet which can be made using different kinds of legume flours & other things like (Sesame Seeds, peanuts, coconut flakes, Gum, etc) and shaped into small balls as a treat for festivals or any special occasions and if you have got sweet tooth like mine then you don’t need any occasion to enjoy these mouth watering laddu’s ;)

Today I am going to share with you all my grandma’s wonderful Rava laddu recipe. Rava means Semolina which is the main ingredient in this recipe mixed all together with nuts, coconut flakes or powder, milk or ghee (clarified butter).
Here’s what I did to make these delicious Rava laddu’s

Laddu

Ingredients:
• 1 Cup Rava (fine Semolina)
• 1/3 cup Evaporated Milk (You can use normal milk too)
• 2 tbsp Ghee (Clarified butter)
• 3/4 Cup Sugar
• 3/4 Cup Desiccated Coconut
• 1/4 tsp Salt
• 1 tsp Cardamom Powder
• 1/4 Cup Raisins, almonds(Prefer thinly sliced)

Procedure:
1. Melt 2 tbsp of Ghee in large nonstick skillet over medium heat. Saute the nuts and raisins till the nuts turn golden brown and the raisins puff up.
2. Now in the Same pan fry the Rava(Semolina) till they turn very light golden brown and set aside in a large bowl.
3. Add Desiccated Coconut and Sugar in the same pan and mix well (on low heat) till the sugar dissolves.
4. Add the fried raisins, nuts , cardamom powder and evaporated milk. Now mix the whole mixture till it is combined well. You can add more sugar to meet your desired level.
5. Add the roasted rava back into the pain and mix well. Now turn off the flame and let the mixture cool slightly or warm enough to handle.
6. Now Make the small balls out of this mixture and you can decorate with more nuts if you like.

Note:
1. Let the laddu’s cool completely before you store them in an airtight container.
2. If the mixture is too dry, you can add few drops of evaporated milk or milk to bind the laddu’s easily.
